With freshly picked, pitted plums.
Ingredients:
Yeast started July 31, 2000 with 1/3 can frozen limeaid and 1 c honey pastuerized in water.
Cooked honey with water while pitting plums. Added must chiller and plums. Heated to 170 and kept hot for 10 minutes. Cooled. Poured into bucket. Added water to make 5+ gallons. Pitched yeast. Stirred and stored with a bubble-lock.
September 28, 2000 - SG 1.004 - Racked.
March 8, 2001 - Bottled, still.
